Hello lovely friends…..
Here we are… Sunday…. once again…… How was your weekend?
I hope you are finding a little Sunday stillness………
John made some more of the no-flour no-fat oatmeal banana muffins I love…
The batter is a mix of ground oatmeal, bananas, yoghurt, eggs and honey….
Here is the recipe.
Banana Oatmeal Muffins
- 2 1/2 c oats (ground in the vitamix or a food processor to make oat flour)
- 1 c greek yoghurt
- 2 eggs
- 1/2 c honey (john doubles the recipe and only uses 3/4 c honey)
- 2 ripe bananas
- 2 tsp baking powder
- 1 tsp baking soda
- 2 TBSP ground flax
- 1 tsp vanilla
Mix liquid ingredients in kitchen aid/mixer….then add the dry ingredients…..and blend til mixed. Add fruit, nuts etc as desired.
Once he whips up the batter…..He divides it into 3…
and makes a batch of raspberry, walnut….and my fav (when you just need a treat).. mini chocolate chips…. just a sprinkling…..
They tend to stick to the muffin liners so he oils the muffin tin and skips the liners……
Bake at 350 degrees for 20 minutes.
So in love with my new side plate from Anthropologie…. such a stunner…Regretting that I didn’t ordered the mug that goes with this set….
Definitely on my wish list….
The wooden jar-spoon is form Hope in the Woods…. so beautiful….don’t you think?
At first I was scared to use my new spoons…
but as Luke says… that’s what they’re for…. it cleans up beautifully…. ♡

All images were edited in Lightroom using a new preset…called Air….that will be available in The Studio later today.
